SECRET BAR FOOD AT LOCAL'S HOUSE

Do you know about different kinds of local liquors in Taiwan beside the green labeled Taiwan beer and Kaoliang?

In this class we will be tasting 5 different local liquors, from the regional limited red rice wine, traditional Chinese herbal liquor to millet wine made in the indigenous  tribes, along with the cooking session of authentic Taiwanese bar food to go with the liquors. Also choose 1 craft beer of your favorite Taiwanese flavor such as jasmine, indigenous cinnamon, passion fruit, or oolong tea! 

In the end of class, you'll make your own original herbal liquor to bring back home!

Kinmen produces the best Kaoliang Wine in Taiwan. It is a kind of distilled spirit made from fermented sorghum. Spicy at the first sip but sweet afterwards.

The ducks are dried on bamboo sticks for a week, using the strong monsoon wind during the winter from the ocean and smoke for 3 days with sugarcane. This was a precious gift to show respect during New Year.

Produced in Yilan, Red rice wine is a kind of rice wine fermented with red yeast, and the history can be traced back to 1790's when the first red rice wine was made in Taiwan.

Lu Wei is one of the most popular small eats in Taiwan. It's all kinds of veggies, soybean products, offal, meat, all braised with spices. People take Lu Wei home and go with a beer.

Lychee in Taiwan are very sweet, with a light floral taste. The sweet fruit flavor with low alcohol concentration is very popular among young ladies.

Made with salty dried tofu, using soybean or rice koji and rice wine for the fermentation. Due to the breakdown of its proteins by the process of fermentation, the texture is surprisingly similar to cheese.

Bamboo Green Liquor is often mentioned in the Wuxia novels (Chinese fiction concerning the adventures of martial artists in ancient China) for its refreshing and healing of the body.

Drying of salty mullet roe under the sun is an ordinary scene during winter time in the southern Taiwan. It is one of the best delicacies in Taiwan and is always served in banquets or on the table of New Year.

Millet Wine is usually made in the indigenous tribes and is served during festivals of harvest. It is the oldest wine in Taiwan which the tradition has lasted over 1000 years.

Taiwanese sausages taste rather sweet and is always served with raw, sliced garlic. The spicy of the garlic works well for balancing the sweetness, and the meat is often marinated with alcohol such as Kaoliang or rice wine.
